This is the tale of a young, promising, up-and-comer, ready to take the restaurant and catering industry by storm. He devoted the last fifteen years of his life to learning his craft. His education, training, work experience, the books and magazines he read, the TV shows he watched, even the vacations he took, were focused on the food business. His single-minded purpose was to one day own his own restaurant.

When he was finally ready to take the plunge, he asked his most trusted mentor and confidant:

“After all of your success in this business, if you could share just one piece of advice with me, what would it be?”

To which his mentor responded,

“Get into a different line of work.”

Urban Legend? Perhaps. However, chances are, you can relate to the message. Our industry has a well-earned reputation for being long on hours and short on profit.
